Tara's Homemade MarinaraPopular

This is a base for many of my dishes. This makes alot of sauce, so freeze in batches for a quick dinner. Great over pasta with itailan sausage or use it over stuffed pasta. Make sure to use fresh herbs. I use a food processor to puree the onion and garlic so my kids wont try to pick out the veggies.

Extra virgin olive oil
1 sweet onion
2 large cloves of garlic
2 (28oz) cans of crushed tomatoes
A couple glugs of red wine
small handful of fresh parlsey, chopped
6 leaves of fresh basil
2 bay leaves
1/2 tsp of sugar
pinch of red pepper flakes
salt and pepper

Pulse onion and crushed garlic (give garlic a wack with the flat part of your knife) in a food processor. Put the oil in a large heavy bottomed pot. Pour the onion and garlic into the pan and saute until translucent. Dont burn the garlic, it will turn bitter. Pour in the wine and let it reduce for 2 minutes. Pour in the tomatoes and throw in the herbs and pepper flakes. Season with salt and pepper. Let simmer for at least 30 min, but longer is better.

Serve over your favorite pasta and a little parmesan cheese
