Heirloom Tomatoes with Goat CheesePopular
A simple and elegant start to a meal. If Heirloom tomatoes are not available use what you can find. This recipe is best made during the summer when tomatoes are at their best. 2 large Heirloom Tomatoes Kosher Salt and Fresh Pepper Toasted Pine Nuts Fresh Thyme, Crumbled Goat Cheese Extra Virgin Olive Oil Balsamic Vinegar Toast pine nuts in a dry pan until light brown, be careful because they burn easily. Thickly slice the tomatoes and fan them out on a decorative platter. Sprinkle with salt and pepper and cover the tomatoes with the goat cheese. Pull the thyme leaves from the stems and sprinkle the thyme and pine nuts on top of the goat cheese. Finally, drizzle everything with the olive oil and balsamic vinegar. There are no exact measurements for this recipe, use as much or as little of each ingredient as you wish.
